ANÁLISIS DEL COSTO DE PRODUCCIÓN DE LA HAMBURGUESA MIXTA DON LUCHO EN DISMERO S.A.

En mayo de 2025, se examinó el costo de producción de la hamburguesa mixta Don Lucho en DISMERO S.A., elaborada con carne de res y cerdo. Mediante un enfoque cuantitativo, se calculó un costo total de $284.74, desglosado en $185 para materias primas, $31.33 para mano de obra y $68.41 para costos indirectos, dando un costo unitario de $1.694 por hamburguesa (168 unidades). Se identificaron mermas de 0.325 g (0.72% del peso total) y 15 lb de grasa limpia como factores clave. Se propusieron mejoras operativas, ajustando precios de empaques y volumen de materias primas, reduciendo el costo a $252.24. Este estudio fortalece habilidades en contabilidad de costos y propone soluciones prácticas para DISMERO S.A. y el sector cárnico.
