Abstract

This research was carried out in order to generate a gluten-free product with raw materials that have excellent nutritional value, to provide a new alternative to the food industry for gluten-free products that meet the nutritional needs of people with intolerances to this component. . Therefore, the objective of this research project was to make a gluten-free cookie based on Chinese potato flour (Colocasia esculenta) and soy flour (Glycine max), with the following formulations 25:75 Chinese potato flour: Flour of Soy, 50:50 Chinese potato flour: Soy flour and 75:25 Chinese potato flour: Soy flour plus the type of fat vegetable shortening and industrial margarine. In addition, a proximal, sensory and gluten composition analysis was carried out on the best treatment of cookies made with Chinese potato and soy flour to determine if it meets the requirements established by the NTE INEN 2085:2005 regulations. The results indicated that the six formulations obtained statistically significant differences with a protein content of 9.38 to 14.42% and humidity values between 2.09 to 6.05%, with T1 (25:75 HP: HS + vegetable shortening) being the best. regarding its proximal composition. According to the sensory analysis of acceptability, the formulation that tasted the most was T5 (50:50 HP: HS + industrial margarine) with a slightly brown color, sweet flavor, medium hard texture, medium crunchy, medium sandy palatability and vanilla aftertaste. .
