Abstract

This research analyzed the effect of pitahaya variety (Hylocereus undatus and Hylocereus megalanthus) and pulp concentration on the physicochemical quality of the nectar. A 2x2 factorial design with four treatments (yellow and red, with pulp-to-water ratios of 1:3 and 1:4) was used, evaluating parameters such as pH, titratable acidity, and soluble solids (°Brix). The results showed that yellow pitahaya exhibited greater stability in pH (5,17-5,18) and acidity (0.70–0.73), as well as an increase in °Brix with increasing dilution (11.87–12.67). Conversely, the red pitaya presented higher pH values (4,70-4,74), accompanied by a marked decrease in acidity (1.28–0.90) and a slight reduction in soluble solids (12.27–12.07). Multivariate analysis supported these differences: the dendrogram grouped the red pitaya treatments as more uniform, while the yellow pitaya showed greater variability with dilution. Principal component analysis identified two relevant dimensions: acid-base balance (pH and acidity) and soluble solids content (°Brix), which allowed for a clearer understanding of the effect of each factor on nectar quality. In conclusion, the most favorable treatment corresponded to the yellow pitaya nectar with a pulp-to-water ratio of 1:4, combining a higher sugar concentration with acid stability and an appropriate pH. This result positions it as the most recommended option for the production of quality nectars, with good sensory acceptance and shelf life potential in the agri-food industry.
